It is useful to understand this data type in case you come across it in any legacy systems that have been upgraded to SQL Server 2005. If you need to hold any character data that will always be longer than 8,000 characters, then you should not use varchar(max). This is where the text data type comes into play. These data types can hold up to 2 gigabytes of data, and could be used to hold notes about customers in a call center, for example.
